Curried carrot soup made with vegetable broth, sauteed onions, and your choice of golden raisins or sour cream for a delightful finish.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 1 tablespoon curry powder
  • 2 pounds carrots, chopped
  • 4 cups vegetable broth
  • 2 cups water, or as needed
Instructions:
  • In a large pot, warm oil over medium heat. Cook onions until tender. Mix in curry powder. Add carrots, ensuring they're coated. Pour in vegetable broth and simmer until carrots are soft, about 20 minutes.
  • Blend the carrots and broth until smooth. Return mixture to the pot and adjust consistency with water to your liking.
