Delicious curried sweet potato soup with carrots and apples, perfect hot or chilled, even tastier the next day.
Ingredients:
  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups baby carrots
  • 2 small apples - peeled, cored, and cubed
  • 1 medium yellow onion, chopped
  • 1 tablespoon vegetable oil
  • 1 tablespoon curry powder
  • 2 teaspoons garlic salt
  • 1 teaspoon ground black pepper
  • 2 cups skim milk
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon lemon juice
  • 2 tablespoons crumbled goat cheese, or to taste
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Combine sweet potatoes, carrots, apples, and onion in a large baking dish. Drizzle with oil, mix well to coat evenly. Add curry powder, garlic salt, and pepper. Cover with foil before baking.
  • Roast in the preheated oven for 20 minutes. Uncover and continue roasting until vegetables are tender, an additional 10 minutes. Let cool for about 10 minutes before serving.
  • Combine the cooked vegetables in a pot and blend with an immersion blender until smooth. Mix in milk, ginger, and lemon juice. Simmer for 20 minutes.
  • Garnish with crumbled goat cheese and serve warm.
