Curry Sweet Potato Lentil Soup: A flavorful twist on a classic dish, suitable for any meal.
Ingredients:
  • 1 large or 2 medium dark-orange sweet potatoes, peeled, cut into 1/2-inch cubes (2 cups)
  • 1/4 cup chopped onion
  • 1/2 cup apple juice
  • 1/2 cup water
  • 2 cans (19 oz each) Progresso™ Vegetable Classics lentil soup
  • 1 1/2 cups frozen cut green beans
  • 1 cup finely chopped cooked chicken
  • 2 to 3 teaspoons curry powder
Instructions:
  • In a 3-quart saucepan, bring sweet potatoes, onion, apple juice, and water to a boil over medium-high heat. Once boiling, reduce heat to medium-low, cover, and simmer for 5 minutes.
  • Combine the soup, beans, chicken, and curry powder in a pot. Bring the mixture to a boil, then lower the heat to medium-low. Cover and simmer for 10 to 15 minutes, stirring occasionally, until the vegetables are tender.
