Elevate your summer meals with a flavorful and easy-to-make salad recipe from Prevention® Healthy Cooking.
Ingredients:
  • 2 lb sweet potatoes, peeled and cut into 3/4-inch chunks
  • 3 tablespoons chopped pecans
  • 1/2 cup Yoplait® Original fat-free plain yogurt
  • 2 tablespoons light mayonnaise
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon curry powder
  • 1/8 teaspoon salt
  • 1 cup canned pineapple tidbits in juice, drained
  • 3 green onions, sliced
Instructions:
  • In a large saucepan, submerge sweet potatoes in cold water. Bring to a boil, then lower the heat and simmer with the lid on for 10 to 12 minutes until tender. Drain and allow to cool.
  • Toast pecans in a small nonstick skillet over medium heat, stirring often, for 3 to 4 minutes until lightly toasted. Transfer to a plate and let cool.
  • Combine yogurt, mayonnaise, brown sugar, curry powder, and salt in a large salad bowl. Add pineapple, green onions, and sweet potatoes; mix gently. Top with toasted pecans. Serve right away or refrigerate until serving.
