Crispy sweet potato wontons with mango chutney - a party favorite!
Ingredients:
  • 1 tablespoon margarine or butter
  • 1 cup diced peeled sweet potato
  • 1/2 cup diced red bell pepper
  • 4 medium green onions, sliced (1/4 cup)
  • 2 teaspoons curry powder
  • 1/4 teaspoon salt
  • 1 egg
  • 2 teaspoons Gold Medal™ all-purpose flour
  • 1/2 cup vanilla yogurt
  • 24 wonton squares
  • 2 tablespoons margarine or butter, melted
Instructions:
  • Preheat the oven to 350°F. Lightly coat 24 small muffin cups that are 1 3/4x1 inch in size with cooking spray.
  • Begin by melting 1 tablespoon of margarine in a 10-inch skillet over medium-low heat. Add sweet potato, bell pepper, and onions, stirring well. Cover and cook for 3 to 5 minutes, stirring occasionally until the sweet potato is tender. Mix in curry powder and salt, and allow it to cool slightly.
  • In a medium bowl, whisk together the egg and flour until smooth, then mix in the yogurt. Add the sweet potato mixture and combine well. Brush one side of each wonton square with melted margarine, then press them into the muffin cups, margarine side up. Fill each wonton with the sweet potato mixture. Cover and refrigerate for up to 8 hours before baking.
  • Bake until wontons are golden brown and centers are set, about 12 to 15 minutes.
