Curried Sweet Potato and Apple Soup

Spiced sweet potato and apple curry, a cozy twist on a classic.
Ingredients:
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, sliced
  • 1 tablespoon finely chopped gingerroot
  • 1 teaspoon curry powder
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 4 cups water
  • 1 1/4 lb sweet potatoes, peeled and cut into 1-inch pieces
  • 3 large Granny Smith apples, peeled, cored and cut into 1-inch pieces
  • 1/2 cup chopped fresh cilantro
Instructions:
  • In a large saucepan or Dutch oven, heat oil over medium heat. Sauté onion and garlic for 5 minutes, or until onions are tender.
  • Sprinkle in gingerroot, curry powder, cumin, salt, and cinnamon. Stir continuously for 1 minute. Introduce water, sweet potatoes, and apples. Bring to a boil, then lower the heat. Cover and gently simmer for 20 minutes, stirring occasionally, until the sweet potatoes are soft.
  • Working in batches, blend one-third to one-half of the soup mixture in a blender or food processor until smooth. Repeat with the remaining soup. Reheat the soup if needed, then stir in the fresh cilantro for a burst of flavor.
