Roasted red salsa

Roast tomatoes and bell peppers with sweet and spicy seasonings for a delicious salsa.
Ingredients:
  • 3 (about 350g) truss tomatoes, halved
  • 1 red capsicum, seeded, quartered
  • 1 red onion, coarsely chopped
  • 3 garlic cloves, bruised
  • 16.00 gm brown sugar
  • 3.75 gm mild paprika
Instructions:
  • Preheat the oven to 180C. In a large roasting pan, toss tomato, capsicum, onion, garlic, oil, sugar, and paprika. Season with salt and pepper. Roast for 45 minutes, stirring halfway, until vegetables are tender. Allow to cool for 15 minutes before serving.
  • Pulse in a food processor until chunky and creamy.
