Spicy chipotle salsa with smoky kick, made by grilling tomatoes for rich flavor.
Ingredients:
  • 10 dried chipotle peppers
  • 12 roma (plum) tomatoes
  • 0.25 yellow onion, coarsely chopped
  • 2 cloves garlic, or more to taste
  • 2 tablespoons white vinegar
  • 2 teaspoons salt
  • 1 pinch ground black pepper, or to taste
  • 1 lime, juiced, or more to taste
Instructions:
  • Fill a saucepan with water and add dried chipotle peppers. Bring to a boil, then let simmer over low heat for 30 minutes until peppers are soft. Drain and cool. Remove stems, cut open, and deseed the peppers. Set aside.
  • Prepare your outdoor grill by preheating it to high heat and lightly oiling the grate.
  • Char tomatoes on a hot grill until skin wrinkles and peels, rotating frequently for about 10 minutes. Allow grilled tomatoes to cool.
  • In a food processor, combine grilled tomatoes, chipotle peppers, yellow onion, white vinegar, salt, black pepper, and lime juice; pulse briefly, then blend until nearly smooth.
  • Chill in the refrigerator for at least 2 hours to allow the flavors to meld together.
