Slicing veggies into big ribbons adds crunch and lets their flavors shine in coleslaw.
Ingredients:
  • 1/4 small red cabbage
  • 1/4 small green cabbage
  • 1 large carrot, peeled, cut into thin ribbons
  • 1/2 red onion, thinly sliced
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 61.88 gm whole-egg mayonnaise
  • 21.00 gm lemon juice
Instructions:
  • Slice cabbage leaves into 3cm pieces and cut carrot ribbons into thirds. Mix the cabbage, carrot, onion, and parsley in a bowl.
  • Combine mayonnaise and fresh lemon juice in a bowl, mixing until smooth. Drizzle the mixture over the cabbage blend and toss together until fully combined. Serve and enjoy!
