Try this delicious roasted potato salad made with bacon, eggs, and a creamy mayo dressing. Customize it to your liking!
Ingredients:
  • 10 red potatoes, cut into bite-size pieces
  • 2 teaspoons olive oil, or as needed
  • 3 large hard-cooked eggs, chopped
  • 0.5 stalk celery, chopped
  • 0.25 cup chopped green onion
  • 3 slices cooked bacon, chopped
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Lay out the potatoes on a baking sheet and generously drizzle with olive oil.
  • Roast in the preheated oven until tender, approximately 45 minutes, then allow to cool for a minimum of 15 minutes.
  • Transfer the roasted potatoes to a spacious salad bowl. Combine hard-cooked eggs, celery, green onion, and bacon with the potatoes. Gently mix in mayonnaise and season with salt and pepper. Chill in the refrigerator for about 1 hour to allow the flavors to meld.
