Wow your loved ones with succulent orange roast pork paired with flavorful roast broccoli and potato salad.
Ingredients:
  • 3kg pork leg roast bone in
  • 30g salt
  • 40.00 ml grated orange rind
  • 500g baby potatoes, halved
  • Olive oil spray
  • 400g broccoli, cut into florets
  • 1/2 mini red cabbage, thinly shredded
  • 2 oranges, segmented
  • 60ml orange
Instructions:
  • Preheat oven to 230C, then pat the pork dry with paper towels.
  • Mix sea salt and orange rind in a small bowl. Rub the mixture over the pork, making sure to massage it into the cuts. Place pork, skin side up, in a roasting pan. Roast at high heat until the skin crackles and crisps. Lower the oven temperature and continue roasting until desired doneness. Let it rest, covered, for 20 minutes before serving.
  • Prepare a baking tray by lining it with parchment paper. Arrange the potatoes on the tray and spray them with oil. Roast in the oven for 10 minutes. Then, add the broccoli to the tray and continue roasting for another 15 minutes until the vegetables are golden and tender. Let them cool for 5 minutes before transferring to a bowl. Mix in the cabbage, orange segments, and dressing, and toss everything together. Enjoy!
