Christmas pork loin roasted with spiced cranberry-orange glaze for a festive aroma-filled holiday delight.
Ingredients:
  • 1 (4 pound) boneless pork loin roast
  • 1 teaspoon whole cloves
  • 1 medium apple, sliced
  • 2 (16 ounce) cans whole berry cranberry sauce
  • 1 (16 ounce) can chicken broth
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 medium orange, zested
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Prepare the pork roast by placing it in a roasting pan, then studding it with whole cloves and topping it with apple slices.
  • Combine cranberry sauce, chicken broth, cinnamon, nutmeg, and ginger in a bowl, mashing them until well combined. Pour half of the mixture over the roast and cover with a lid or aluminum foil.
  • After 30 minutes in the preheated oven, uncover the roast, pour the rest of the cranberry mixture over it, and then sprinkle the orange zest on top.
  • Continue roasting in the oven until the cranberry mixture caramelizes into a glossy glaze and the meat reaches an internal temperature of at least 145°F (65°C), approximately 30 minutes longer.
