Apple-Glazed Pork Roast

Indulge in a festive Christmas pork roast with apple glaze for a delicious holiday dinner.
Ingredients:
  • 1 boneless pork loin roast (3 lb)
  • 1 teaspoon salt
  • 3/4 teaspoon freshly ground pepper
  • 1 cup apple jelly
  • 2 tablespoons country-style Dijon mustard
  • 2 teaspoons chopped fresh sage leaves
  • 4 large Fuji apples, cut into wedges
  • 2 large sweet onions, cut into wedges
  • 1 tablespoon canola oil
Instructions:
  • Preheat oven to 375°F. Line a roasting pan with foil and spray the rack with cooking spray. Place the pork on the rack and season with 1/2 teaspoon each of salt and pepper.
  • Microwave the jelly in a medium microwavable bowl, uncovered, on High for about 1 minute or until melted. Stir in the mustard and sage, then brush the mixture onto the pork.
  • Place apples and onions in a large bowl. Sprinkle with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper, then drizzle with oil and toss to coat. Arrange the apple mixture around the pork.
  • Roast pork uncovered until meat thermometer reads 145°F, about 50-60 minutes. Let pork stand covered loosely with foil for at least 3 minutes. Slice and serve with apples and onions.
