Easy slow cooker Christmas pork roast: minimal effort, maximum flavor.
Ingredients:
  • 36.40 gm olive oil
  • 1 medium brown onion, finely chopped
  • 1 garlic clove, crushed
  • 2 tsp finely grated lemon rind
  • 20.00 ml finely chopped fresh sage leaves
  • 375.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • 1kg pork neck (scotch)
  • Mashed potato, to serve
  • Lemon wedges, to serve
  • Sage leaves, to serve
Instructions:
  • In a frying pan, heat half of the oil over medium-high heat. Sauté onion and garlic until onion softens, about 3 to 4 minutes. Transfer onion mixture to a bowl. Mix in lemon rind, sage, breadcrumbs, and egg. Season with salt and pepper to taste.
  • Lay the pork on a cutting board. Make a lengthwise cut without slicing all the way through. Lay the pork flat. Spread the stuffing evenly. Fold the pork over to cover the stuffing. Use kitchen string to tie the pork at 3cm intervals for security.
  • In a large frying pan over medium-high heat, heat the remaining oil. Add the pork and cook for 8 minutes, turning occasionally, until browned. Transfer the pork to a 5-liter slow-cooker. Cover and cook on high for 4 hours until tender. Slice the pork and serve with mashed potatoes, lemon wedges, and sage leaves.
