Slow-Cooker Pork Roast with Cranberries

Slow-cooked pork roast flavored with sweet dried cranberries and tangy cranberry juice cocktail - a delightful dinner treat.
Ingredients:
  • 1 (2 1/2-lb.) boneless pork shoulder roast, trimmed of fat
  • 1 cup sweetened dried cranberries
  • 1/2 cup chicken broth
  • 1 teaspoon shredded orange peel
  • 1/2 cup cranberry juice cocktail
  • 2 tablespoons cornstarch
Instructions:
  • Place the pork roast in a 3 1/2 to 4-quart slow cooker.
  • Mix cranberries, broth, orange peel, and 1/4 cup of cranberry juice cocktail in a small bowl until well combined. Pour the mixture over the roast.
  • Cover the dish and let it simmer on low heat for 7 to 9 hours.
  • Place the roast on a beautiful serving platter and cover it with foil to keep it warm. Transfer the juices from the slow cooker to a medium saucepan, and skim off any fat if needed.
  • In a small bowl, mix together 1/4 cup cranberry juice cocktail and cornstarch until smooth. Stir into the saucepan juices. Cook over medium heat until thickened and bubbling. Serve with pork roast and sprinkle with shredded orange peel for extra flavor.
