Creamy garlic mashed Yukon Gold potatoes with cream cheese, Parmesan, butter, and chives for a flavor-packed side dish.
Ingredients:
  • 5 pounds Yukon Gold potatoes
  • 2 cups Parmesan cheese
  • 1.5 cups cream cheese
  • 1 cup chopped fresh chives
  • 0.5 cup butter
  • 0.5 medium head garlic, peeled and minced
  • 1 pinch salt and pepper to taste
Instructions:
  • Prepare all your ingredients.
  • Peel and quarter potatoes, then place them in a large pot. Cover with salted water and bring to a boil. Simmer for about 15 minutes until potatoes are tender yet firm.
  • Drain the potatoes and let them dry in the pot over low heat for 1 to 2 minutes.
  • Combine Parmesan cheese, cream cheese, chives, butter, garlic, salt, and pepper.
  • Mash the mixture until it's velvety smooth, then serve.
  • Enjoy piping hot.
