Creamy Garlic Mashed Potatoes with roasted garlic and Yukon Gold potatoes - the ultimate BEST!
Ingredients:
  • 1 head of garlic
  • 1 tablespoon extra virgin olive oil
  • 2 pounds potatoes, preferably Yukon Gold or another yellow, waxy potato
  • Salt
  • 1/3 cup cream
  • 3 tablespoons butter
Instructions:
  • Preheat the oven: Set the oven temperature to 400°F.
  • Prepare the garlic: Peel off the outer skin of a whole garlic head, keeping it whole. Cut off the tops of the cloves to expose them. Drizzle olive oil, sprinkle salt, wrap in foil, and bake at 400°F for 30-40 minutes until soft and lightly browned. Cool before using.
  • Cook the potatoes: As the garlic roasts, peel and cut the potatoes into 1-inch chunks. Place them in a saucepan, add 1/2 teaspoon of salt, cover with cold water, and bring to a simmer. Cook until tender, about 15 minutes.
  • Combine the cream and butter in a pan on low heat until the butter is melted and the cream is warm, or heat in the microwave-safe bowl until melted and warmed.
  • Combine drained potatoes back in the pot on low heat, add roasted garlic, and mash using a potato masher or large fork.
  • Combine the cream and butter, then season to taste: Mix in the cream and butter until the potatoes reach your desired consistency. Avoid over mixing to prevent a gummy texture. Adjust salt to taste, if necessary.
