Cheesy mashed potatoes with creamy bacon goodness.
Ingredients:
  • 5 pounds russet potatoes
  • 10 slices Dietz & Watson Gourmet Smoked Bacon
  • 1 (8 ounce) package cream cheese, room temperature
  • 0.5 cup unsalted butter, melted
  • 1 cup sour cream
  • 0.25 cup minced chives
  • 2.5 cups Dietz & Watson Roasted Garlic Cheddar Cheese, grated
  • 2 teaspoons kosher salt
Instructions:
  • Preheat your oven to 350 degrees F. Peel and chop potatoes into 1-inch chunks. Place them in a large saucepan, cover with cold water, and bring to a boil. Reduce heat and simmer until tender, about 20 minutes. Drain the potatoes, cover the pan, and set aside.
  • In a large skillet over medium heat, crisp and brown the bacon, turning once. Drain on paper towels, cool, and crumble into pieces.
  • Mash the potatoes in the pan until fluffy using a fork. Mix in cream cheese, butter, and sour cream until smooth. Stir in chives, 2 cups cheddar cheese, half the bacon, salt, and pepper until well combined.
  • Transfer the mixture to a buttered 3 quart baking dish and sprinkle the remaining 1/2 cup cheddar cheese on top. Bake for about 30 minutes until the top is slightly golden and the potatoes are heated through. Remove from the oven, garnish with the remaining bacon, and serve immediately.
