Impressively simple chicken and mashed potatoes dish.
Ingredients:
  • 40g (1/2 cup) pre-grated parmesan
  • 4 (about 500g) Free Range Chicken Breasts
  • 4 middle bacon rashers
  • 1 garlic clove, thinly sliced
  • 2 (about 600g) desiree potatoes, peeled, chopped
  • 25g butter
  • 60ml (1/4 cup) milk
  • 0.60 gm salt
  • 50.00 ml chopped fresh chives
  • 1 bunch (about 200g) broccolini, ends trimmed
Instructions:
  • Preheat the oven to 220°C. Line a casserole or baking dish with non-stick baking paper. Place the grated cheese on a plate. Coat the chicken with cheese, add 2 slices of garlic on each chicken breast, wrap each chicken breast with bacon, secure with toothpicks, and place in the dish. Sprinkle any remaining parmesan on top. Bake for 20 minutes until golden and cooked through.
  • In a saucepan of boiling water, simmer potatoes for 10 minutes until tender. Drain, return to the pan, and add butter, milk, salt, and chives. Roughly mash, cover to keep warm. In a steamer basket over simmering water, steam broccolini for 3-4 minutes until tender.
  • Gently pull out the toothpicks from the chicken, slice it, and plate with the chive mash and broccolini for a delightful presentation.
