Bacon-wrapped chicken dogs slathered in BBQ sauce make a delicious twist on classic hot dogs.
Ingredients:
  • vegetable oil cooking spray
  • 3 tablespoons mayonnaise, divided, or to taste
  • 1 teaspoon Dijon mustard
  • freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 1 (12 ounce) skinless, boneless chicken breast half
  • kosher salt to taste
  • 4 slices center-cut bacon
  • 2 hot dog buns
  • 1 medium jalapeno pepper, seeded and sliced, or to taste
  • 2 tablespoons barbecue sauce, or to taste
Instructions:
  • Preheat the oven to a sizzling 500 degrees F (260 degrees C), then generously line a baking sheet with foil and give it a quick spray of cooking spray.
  • Combine 1 tablespoon each of mayonnaise, mustard, pepper, and cayenne in a small bowl and mix well.
  • Cut each chicken breast in half lengthwise, then slice each piece in half again. Pair the thicker end of one piece with the thinner end of another to create a uniform thickness for fitting into a hot dog bun. Repeat with the remaining pieces.
  • Place the chicken on a plate and generously season with kosher salt. Spread the mayonnaise mixture over the chicken and toss until evenly coated.
  • Gently position chicken pieces and carefully wrap each chicken "dog" with 2 slices of bacon, ensuring you don't wrap too tightly and that you tuck the ends of the bacon underneath the chicken. Transfer to the lined baking sheet.
  • Roast in the middle of the hot oven until the bacon is golden and the chicken is cooked through, approximately 20 minutes. Use an instant-read thermometer; the center temperature should reach 165°F (74°C).
  • Spread hot dog rolls generously with creamy mayonnaise, then layer on spicy jalapeno slices. Add delicious chicken dogs and finish by drizzling with flavorful barbecue sauce.
