Ingredients:
  • 2 1/2 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 4 boneless skinless chicken breasts (1 1/4 lb)
  • 4 slices bacon
  • 2 medium poblano chiles
  • 3 medium sweet potatoes (1 1/2 lb), peeled, each cut lengthwise into 8 wedges
  • 3 tablespoons vegetable oil
Instructions:
  • Spray the grill rack and a 16x12-inch perforated grill pan with cooking spray. Heat up a gas or charcoal grill. Mix the spice rub ingredients in a small bowl.
  • Coat the chicken generously on both sides with a flavorful tablespoon of the spice rub. Next, wrap each chicken breast snugly with a slice of bacon, making sure to cover the chicken entirely; fasten the bacon ends with toothpicks.
  • 1. Slice the chiles in half lengthwise, discarding the seeds and stems, then cut them into quarters. Place the chiles, sweet potatoes, oil, and the rest of the spice rub in a large resealable plastic bag. Seal the bag and shake well to evenly coat everything.
  • Place potatoes and chiles on one side of the grill pan and chicken on the other side. Grill everything covered over medium heat for 12 to 15 minutes, flipping potatoes and chiles twice and chicken once, until potatoes are tender and chicken reaches an internal temperature of at least 165°F.
