Delicious skewers loaded with marinated mushrooms, bacon-wrapped chicken, and juicy pineapple cooked to perfection on the grill.
Ingredients:
  • 0.25 cup soy sauce
  • 0.25 cup cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons canola oil
  • 10 large mushrooms, cut in half
  • 2 green onions, minced
  • 3 skinless, boneless chicken breast halves - cut into chunks
  • 0.5 pound sliced thick cut bacon, cut in half
  • 1 (8 ounce) can pineapple chunks, drained

Instructions:
  • Combine soy sauce, cider vinegar, honey, canola oil, and green onions in a large bowl. Add mushrooms and chicken, tossing well to coat. Refrigerate and marinate for at least 1 hour.
  • Heat the grill on high.
  • Take out the mushrooms and chicken from the marinade and let the excess drip off. Transfer the marinade to a small saucepan and bring it to a boil over high heat. Lower the heat to medium-low and simmer for 10 minutes. Set it aside.
  • Secure bacon-wrapped chicken chunks on skewers, alternating with mushroom halves and pineapple chunks.
  • Grease the grill grate lightly with oil. Place skewers on the grill. Grill for 15 to 20 minutes, brushing occasionally with the leftover soy sauce mixture, until the bacon is crispy and the chicken juices run clear.
