Chicken and bacon ranch meatballs

Affordable crowd favorite with gourmet homemade ranch for maximum flavor impact.
Ingredients:
  • 500g Chicken Mince
  • 250.00 ml fresh breadcrumbs
  • 22.60 gm barbecue sauce
  • 62.50 ml fresh chives, finely chopped
  • 7 rashers streaky bacon, rind removed
  • 36.40 gm extra virgin olive oil
  • 81.68 gm whole-egg mayonnaise
  • 77.55 gm sour cream
  • 65.00 gm buttermilk (see note)
  • 75g Danish blue cheese, crumbled
Instructions:
  • Combine mince, egg, breadcrumbs, barbecue sauce, and 2 tablespoons of chives in a bowl. Season with salt and pepper, then mix until well combined. Roll mixture into oval-shaped meatballs using level tablespoons.
  • Cut each bacon rasher into 4 pieces. Wrap 1 piece of bacon around each meatball and secure with a toothpick.
  • In a frying pan, heat oil over medium heat. Cook meatballs in batches, turning occasionally, until browned and fully cooked, about 8 to 10 minutes. Place on paper towel to drain.
  • Prepare the Ranch Dipping Sauce by combining mayonnaise, sour cream, and buttermilk in a bowl. Mix well, then season with salt and pepper. Lastly, fold in the remaining chives and cheese.
  • Enjoy the meatballs with a flavorful dipping sauce on the side.
