Creamy bacon and chicken dip with green onions.
Ingredients:
  • 1.5 (8 ounce) packages cream cheese
  • 1 (1 ounce) envelope ranch dressing mix
  • 1.75 cups shredded rotisserie chicken
  • 1.5 cups sour cream
  • 1 cup cooked and chopped bacon (about 12 slices), plus more for garnish
  • 0.5 cup sliced scallions (from 2 large scallions), plus more for garnish
  • 0.5 teaspoon black pepper
  • 1.75 cups shredded sharp Cheddar cheese, divided
Instructions:
  • Prepare all your fine ingredients for a culinary masterpiece.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • In a microwave-safe, broiler-friendly 9-inch square casserole dish, combine cream cheese and ranch dressing mix. Microwave on HIGH for about 1 minute, stirring halfway through, until cream cheese is very soft and mixture is well combined.
  • After microwaving, gently fold in chicken, sour cream, crispy bacon, fresh scallions, black pepper, and 1 cup of Cheddar cheese. Finish by sprinkling the remaining 3/4 cup of cheddar on top.
  • Bake until bubbly around the edges for 25-30 minutes in a preheated oven. Switch to broil, cook for 3-5 minutes until cheese is lightly golden. Sprinkle with extra bacon and scallions before serving.
  • Serve piping hot and straight from the oven.
