Indulge in a delicious pasta dish with chicken, bacon, and creamy ranch cheese sauce.
Ingredients:
  • 3.75 cups uncooked rotini pasta
  • 4 thick-cut bacon slices
  • 1 pound skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon dry ranch dressing mix
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1.5 cups 2% milk
  • 0.5 cup reserved pasta water
  • 1 (8 ounce) package cream cheese, softened
  • 5 teaspoons dry ranch dressing mix
  • 1 pinch salt
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Bring a large pot of salted water to a boil. Cook rotini until al dente, about 8 minutes. Drain rotini, reserving 1/2 cup of pasta water.
  • Cook the bacon in a large skillet over medium-high heat until crispy and evenly browned, about 10 minutes. Remove the cooked bacon and drain on paper towels, leaving the flavorful bacon grease in the skillet.
  • Coat chicken pieces with 1 tablespoon of flavorful ranch seasoning. Sear in the savory bacon grease until beautifully golden, about 5 to 8 minutes. Transfer the perfectly cooked chicken to a plate and keep aside.
  • Clean the skillet. Melt 2 tablespoons of butter in it over medium heat. Whisk in flour until smooth and thickened for about 2 minutes. Gradually stir in milk until the sauce is smooth. If needed, add pasta water 1 tablespoon at a time to thin out the sauce.
  • Blend softened cream cheese into the sauce until fully incorporated. Sprinkle in the remaining 5 teaspoons of ranch seasoning and season with salt to taste. Incorporate cooked pasta and chicken back into the skillet, ensuring they are fully coated with the sauce.
  • Finely chop the crispy bacon and toss it into the pasta dish. Add a sprinkle of freshly chopped parsley for a pop of color and flavor, if desired.
