Chicken-Bacon-Ranch Pasta Bake

Enhanced chicken noodle casserole with extra sauce, crispy bacon, and zesty ranch seasoning for a delicious family meal.
Ingredients:
  • 12 oz uncooked egg noodles
  • 2 teaspoons oil
  • 1/2 cup diced onion
  • 2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 6 oz cream cheese, softened
  • 3 tablespoons ranch dressing and seasoning mix (from 1-oz package)
  • 2 cups shredded deli rotisserie chicken
  • 5 slices bacon, crisply cooked and crumbled
  • 1 1/2 cups frozen sweet peas
  • 1 tablespoon unsalted butter, melted
  • 1 cup Progresso™ panko crispy bread crumbs
  • Chopped fresh parsley for garnish, if desired
Instructions:
  • Preheat your oven to 375°F and lightly grease a 13x9-inch (3-quart) baking dish.
  • Prepare noodles according to package instructions for minimum cook time in salted water. Drain and transfer to a large bowl.
  • Heat oil in a 10-inch skillet until hot. Sauté onion until soft and translucent, then lightly season with salt. Pour in chicken broth and bring to a simmer. Melt cream cheese into the mixture until smooth. Stir in 2 tablespoons plus 2 teaspoons of ranch dressing mix. Pour over cooked noodles and fold in chicken, bacon, and frozen peas. Transfer the mixture into a baking dish.
  • Combine the melted butter, bread crumbs, and remaining 1 teaspoon of ranch dressing mix in a small bowl until everything is evenly coated. Spread this mixture over the noodle mixture.
  • Bake for approximately 20 minutes until the top is golden and the sauce is bubbling. Allow it to rest for 5 minutes before serving.
