Cheesy bacon ranch Alfredo chicken and broccoli casserole - a flavorful twist on a classic dish.
Ingredients:
  • 2.5 cups broccoli florets
  • 3 tablespoons water
  • 3 tablespoons ranch dressing mix, divided
  • 2 pounds skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 (48 ounce) container chicken broth
  • 1 (16 ounce) package small shell pasta
  • 1 tablespoon unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 2.75 cups milk
  • 1 (1.6 oz) package dry Alfredo sauce mix (such as Knorr®)
  • 0.5 cup sour cream
  • salt and ground black pepper to taste
  • 1 cup grated Parmesan cheese
  • 4 slices cooked and crumbled bacon
Instructions:
  • In a microwave-safe bowl, combine broccoli and water. Cover and microwave on high until tender and steamed, for 3 to 4 minutes. Drain any excess liquid and set aside.
  • As the broccoli steams, place 1 tablespoon of ranch dressing mix in a large resealable plastic bag. Add the chicken and pepper, seal the bag, then massage to evenly coat the chicken with the seasonings.
  • In a large pot, bring chicken broth to a boil over medium-high heat. Add pasta shells and simmer for about 10 minutes until nearly cooked, stirring occasionally. Drain pasta, saving 1/2 cup of broth.
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x13-inch casserole dish.
  • In a large nonstick skillet over medium-high heat, melt butter with olive oil. Add chicken, cook until nicely browned all over, about 7 minutes. Transfer chicken to a plate.
  • Pour milk, Alfredo sauce mix, and remaining 2 tablespoons of ranch dressing mix into the hot skillet and bring to a boil. Turn off the heat, then mix in chicken and any juices, pasta, broccoli, sour cream, reserved 1/2 cup pasta cooking broth, salt, and pepper. Place the mixture into the prepared casserole dish and top with Parmesan cheese and bacon.
  • Place the dish in the oven and bake until the cheese is gooey and the sauce is bubbling, approximately 20 minutes. Serve hot.
