Barbecue Bacon Chicken Stuffed with Ranch Cream Cheese

Indulge in savory Ranch cream cheese-stuffed chicken wrapped in bacon, coated with sweet and spicy BBQ sauce, and baked to juicy perfection.
Ingredients:
  • 8 slices bacon
  • 4 oz cream cheese, softened
  • 1 tablespoon Hidden Valley™ The Original Ranch™ salad dressing and seasoning mix (from 1-oz package)
  • 4 boneless skinless chicken breasts (about 1 1/2 lb)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup Annie's™ Naturals organic sweet & spicy BBQ sauce
Instructions:
  • Preheat the oven to 400°F. Cover a 15x10x1-inch pan with foil and give it a light spray of cooking spray.
  • Microwave bacon on a plate layered with paper towels for 3 to 4 minutes until edges begin to brown but are still soft. Then, cut each piece in half crosswise.
  • Combine cream cheese and dressing mix in a small bowl.
  • Make a horizontal slit along the thin long edge of each chicken breast to create a pocket, taking care not to cut through to the other side. Fill each pocket with a quarter of the cream cheese filling (approximately 2 tablespoons). Press the edges of the chicken together to seal, then season with salt and pepper.
  • Place the bacon pieces in a diagonal pattern on the chicken breasts, making sure to press the bacon over the sides. Brush each chicken breast with 1 tablespoon of barbecue sauce.
  • After baking for 15 minutes, generously brush each chicken breast with the remaining 1/4 cup of barbecue sauce, making sure to use about 1 tablespoon on each breast. Continue baking for an additional 10 to 15 minutes, or until the chicken reaches an internal temperature of at least 165°F and the juices run clear when the thickest part is cut.
