Smoked BBQ-Stuffed Pineapple

Stuffed pineapple halves with pulled chicken, glazed walnuts, cranberries, bacon bits, and barbecue sauce; smoked for a flavorful summer dish.
Ingredients:
  • 1 large whole fresh pineapple
  • 1 pound cooked pulled pork
  • 0.5 (12 ounce) bottle barbeque sauce
  • 0.5 cup bacon bits
  • 1 (3.5 ounce) bag glazed walnuts and cranberries
Instructions:
  • Heat up your smoker to 250 degrees F (120 degrees C) and add cherry wood chips for a touch of sweetness.
  • Start by thoroughly washing the pineapple while ensuring the leaves remain attached. Slice the pineapple in half lengthwise, running the knife through the center of the leafy crown. Remove the dense core by cutting a V-shape down the middle of both halves. Create cross and side cuts in each half to hollow out the pineapple, leaving a thin layer of fruit on the skin for stability and texture.
  • Dice the pineapple into 1/2-inch pieces and set aside any extra juice for later use.
  • In a large bowl, toss together pineapple chunks, pulled chicken, barbeque sauce, and bacon bits until well mixed. Spoon the mixture into pineapple halves, then garnish with glazed walnuts and cranberries.
  • Smoke pineapple halves in the smoker until the outsides darken and the leaves start to shrivel, approximately 1 1/2 hours.
  • Gently take out the smoked pineapple halves, being mindful of their delicate and tender texture.
