Grill smoked chicken and BBQ veggies for a mouthwatering family feast.
Ingredients:
  • 4 small chicken fillets
  • 141.25 gm smoky barbecue sauce
  • 500g Desiree potatoes, cut into 2cm pieces
  • 3 corn cobs, peeled, washed
  • 2 zucchini, trimmed, sliced lengthways into strips
  • 2 garlic cloves
  • 125.00 ml flat-leaf parsley leaves, chopped
  • 125g punnet cherry tomatoes
Instructions:
  • Halve each chicken fillet to create thinner pieces. Place them in a ceramic dish and generously coat them with barbecue sauce. Cover and refrigerate for 30 minutes, if possible. Preheat the barbecue plate and grill the chicken on medium-high heat until cooked through.
  • Wash the potatoes and place them in a microwave-safe dish. Cover and microwave on HIGH for 5 minutes. Drain thoroughly.
  • Place corn on a microwave-safe plate, cover, and microwave for 6 minutes until tender. Drain and slice corn into 3cm pieces. Combine corn, potatoes, and zucchini in a large bowl. Add oil, garlic, parsley, salt, and pepper, and toss to coat.
  • Grill potatoes, corn, and zucchini on barbecue for 4 to 5 minutes, turning often, until golden. Then, toss in tomatoes and grill for an additional 3 minutes until heated through.
  • Grill chicken for 2 minutes on each side until perfectly cooked. Serve with BBQ veggies.
