Grill juicy chicken marinated in garlic, chili, and lemon for a flavorful burger.
Ingredients:
  • 10.60 gm fresh lemon juice
  • 4.60 gm olive oil
  • 1/2 tsp dried hot chilli flakes
  • 1 small garlic clove, crushed
  • 1 (about 130g) chicken thigh fillet, excess fat trimmed
  • 19.80 gm good-quality whole-egg mayonnaise
  • 1/4 tsp crushed garlic, extra
  • 1 crusty bread roll, split
  • 2 baby cos lettuce leaves, washed, dried
  • 1 small ripe tomato, thinly sliced
Instructions:
  • Combine lemon juice, oil, chili flakes, and garlic in a medium glass or ceramic bowl. Season with salt, whisk well. Add chicken, coat evenly. Cover with plastic wrap and refrigerate for 10 minutes to marinate.
  • Mix together the mayonnaise and additional garlic in a small bowl, then taste and season with pepper to enhance the flavors.
  • Preheat the barbecue grill or chargrill on medium-high. Remove chicken from the marinade and grill for 5 minutes on each side until perfectly cooked.
  • Preheat grill on high. Arrange the bread roll, cut-side up, on a baking tray and grill for 2 minutes until toasted.
  • On a serving plate, layer the bread roll base with half of the delicious mayonnaise mixture, then pile on lettuce, tomato, chicken, and the rest of the mayo. Add a pinch of pepper, stack on the remaining bread roll, and serve straight away. Enjoy!
