Peri peri chicken and grilled pineapple burgers

Whip up a zesty chicken burger in no time!
Ingredients:
  • 500g chicken schnitzel
  • 62.50 ml medium peri peri sauce
  • 350g pineapple
  • 1 green capsicum, quartered
  • 1 brown onion, cut into thin wedges
  • 2 tsp lime zest
  • 40.00 ml finely chopped fresh coriander leaves
  • 18.20 gm extra virgin olive oil
  • 4 rashers shortcut bacon
  • 4 bread rolls, warmed
  • 1 gem lettuce, leaves separated
  • 81.68 gm light whole-egg mayonnaise
Instructions:
  • In a glass or ceramic dish, coat the chicken with peri peri sauce. In a separate bowl, mix pineapple, capsicum, onion, lime zest, coriander, and oil. Season with salt and pepper before tossing to coat everything evenly.
  • Preheat barbecue grill and hotplate to medium-high heat. Grill chicken for 2 to 3 minutes per side or until fully cooked. Place on a heatproof dish, loosely cover with foil, and let rest for 5 minutes before serving.
  • Cook the pineapple mixture on a hotplate until the pineapple and capsicum are just starting to char, about 5 minutes. Transfer to a plate. Then, cook the bacon on the hotplate for 1 to 2 minutes per side until golden and crisp.
  • Arrange crispy lettuce leaves, savory chicken, crispy bacon, and sweet pineapple mixture on top of the roll bases. Add a generous dollop of creamy mayonnaise. Gently place the roll tops on the fillings to create a mouthwatering sandwich. Serve and enjoy!
