Elevate classic burgers by skewering ingredients and glazing with zesty peri peri sauce.
Ingredients:
  • 6 small bake-at-home dinner rolls
  • 1 egg, lightly whisked, strained
  • 1 1 /18.00 gm sesame seeds
  • 2 Swiss cheese slices, cut into sixths
  • 300g chicken mince
  • 40.00 ml dried breadcrumbs
  • 3 tsp Peri Peri sauce, plus extra to serve
  • 2 tsp chopped fresh oregano
  • 1 tsp finely grated lemon rind
  • 18.40 gm canola oil
  • 6 fresh lemon leaves
  • 1/2 red capsicum, cut into 6 large pieces
  • 1 green shallot, cut into 4cm lengths
  • 6 cherry tomatoes
  • 6 small jalapeno chillies
Instructions:
  • To prepare the burger buns, preheat your oven to 200°C/180°C fan forced. Cut each roll into 3 portions. Brush the portions with egg and place them on a baking tray close together. Sprinkle sesame seeds on top and bake for 10-12 minutes until deep golden.
  • Gently slice through any sections of the roll that are sticking together using a knife.
  • Arrange the center and 1 end piece of each roll standing upright next to each other on the tray, setting aside the remaining ends. Place a piece of cheese on each cut side. Bake for 4 minutes, or until the cheese is melted.
  • In a medium bowl, mix together the mince, breadcrumbs, peri peri sauce, oregano, and lemon rind. Shape the mixture into small patties using tablespoonfuls.
  • In a non-stick frying pan, heat oil over medium-high heat. Cook the patties for about 4 minutes on each side until golden brown and fully cooked. Place on a paper towel-lined tray to drain and cool.
  • Skewer each cheesy bun along with lemon leaves, capsicum, patty, another cheesy bun, second patty, shallot, tomato, top with the other cheesy bun end, and finish off with a jalapeno on each.
  • Preheat a barbecue grill or chargrill on medium heat. Grill the kebabs for 2-3 minutes on each side until slightly charred. Brush the patties with extra peri peri sauce.
