Fire up the grill for a mouthwatering feast with Curtis Stone's piri piri chicken burgers.
Ingredients:
  • 6 long fresh red chillies, coarsely chopped
  • 6 garlic cloves, coarsely chopped
  • 4cm-piece fresh ginger, peeled, coarsely chopped
  • 42.00 gm fresh lemon juice
  • 3.60 gm sea salt flakes
  • 180ml (3/4 cup) olive oil, plus more to brush
  • 8 (about 100g each) boneless skinless chicken thigh fillets, trimmed, pounded to an even thickness
  • 195g (3/4 cup) mayonnaise
  • 125ml (1/2 cup) apple cider vinegar
  • 55g (1/4 cup) caster sugar
  • 4.80 gm sea salt flakes
  • 1 continental cucumber, peeled, shaved into ribbons with a vegetable peeler
  • 4 hamburger buns, split
  • 1 small red onion, thinly sliced into rings
  • 250.00 ml lightly packed fresh coriander leaves and tender stems
Instructions:
  • Puree together chili, garlic, ginger, lemon juice, and salt in a blender until smooth. With the blender running on high, slowly stream in the oil. Transfer 1/2 cup of the chili mixture to a large bowl. Add the chicken and mix well to coat. Cover and refrigerate for at least 30 minutes to marinate. Combine 1/3 cup of the chili mixture with mayonnaise, season with salt to taste, cover, and refrigerate the sauce. Store the remaining chili mixture for later use.
  • Whisk vinegar, sugar, and salt until sugar dissolves. Add cucumber and refrigerate uncovered for at least 20 minutes. Drain on paper towels before using.
  • Preheat the barbecue to medium-high heat. Take the chicken out of the marinade, pat it dry, and season with salt. Barbecue the chicken for about 4 minutes until lightly charred on one side. Flip the chicken and continue grilling while basting with the leftover chili mixture until it's cooked through, about another 4 minutes.
  • Lightly brush the cut sides of the buns with oil and grill them on the barbecue, cut side down, for about 2 minutes until they are nicely toasted.
  • Spread a flavorful chilli mayonnaise over the bottom buns, then layer each with 2 pieces of chicken, pickled cucumber, onion, and fresh coriander. Top with the remaining buns and enjoy your delicious creation!
