Spicy piri piri marinated grilled chicken - a flavorful African-inspired dish.
Ingredients:
  • 10 African bird's eye chile peppers
  • 1 bunch cilantro
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 teaspoons white vinegar
  • 2 limes, juiced
  • 1 teaspoon salt, or to taste
  • 1 teaspoon fresh ground black pepper, or to taste
  • 1 chicken breast, cut in half
  • 2 chicken leg quarters with skin
Instructions:
  • Wear rubber gloves to finely chop chiles and transfer to a mixing bowl. Combine cilantro, garlic, vegetable oil, vinegar, lime juice, salt, and black pepper. Stir piri piri sauce until well combined.
  • In a resealable plastic bag, combine chicken breasts and legs with piri piri sauce. Seal the bag and gently shake to coat the chicken. Marinate in the refrigerator for at least 4 hours.
  • Allow the chicken to sit at room temperature for 30 minutes by taking it out of the refrigerator.
  • Get your outdoor grill ready by preheating it to a delightful medium heat and giving the grate a light coating of oil.
  • Take the chicken out of the bag, and dispose of the bag and cilantro. Grill the chicken on the preheated grill, turning occasionally until fully cooked and the internal temperature reaches at least 165 degrees F (74 degrees C), approximately 25 minutes.
