Spicy chicken burgers by renowned chef Curtis Stone - bursting with flavor, ideal for effortless hosting.
Ingredients:
  • 6 long fresh red chillies, coarsely chopped
  • 6 garlic cloves, coarsely chopped
  • 4cm piece ginger, peeled, coarsely chopped
  • 42.00 gm lemon juice
  • 3.60 gm sea salt flakes
  • 185ml (3/4 cup) olive oil, plus extra, to brush
  • 8 (about 100g each) boneless skinless chicken thigh fillets, trimmed, pounded to an even thickness
  • 190g (3/4 cup) whole egg mayonnaise
  • 125ml (1/2 cup) apple cider vinegar
  • 55g (1/4 cup) caster sugar
  • 4.80 gm sea salt flakes
  • 1 continental cucumber, peeled into ribbons
  • 4 hamburger buns, split
  • 1 small red onion, thinly sliced into rings
  • 250.00 ml lightly packed fresh coriander leaves and tender stems
Instructions:
  • Puree the chilli, garlic, ginger, lemon juice, and salt in a blender until smooth. While blending on high, slowly drizzle in the oil until well combined. Pour 160ml (2⁄3 cup) into a large glass or ceramic bowl. Add the chicken and mix well to coat. Cover and refrigerate for at least 30 minutes to marinate. Mix 80ml (1⁄3 cup) of the chilli mixture with the mayo. Season with salt, cover, and chill. Store the rest of the chilli mixture for later use.
  • In a bowl, combine vinegar, sugar, and salt. Whisk until sugar dissolves. Add cucumber and chill uncovered in the fridge for a minimum of 20 minutes.
  • Preheat the barbecue to medium-high. Take the marinated chicken out and dry it off. Sprinkle with salt. Grill for 4 minutes until one side is lightly charred. Flip and grill for another 4 minutes, basting with the chili mixture until the chicken is fully cooked and nicely charred.
  • Brush a small amount of oil on the cut sides of the buns and grill them on the barbecue, cut-side down, for about 2 minutes until they are nicely toasted.
  • Spread the flavorful piri piri mayo generously over the bottom buns. Layer each with 2 succulent pieces of chicken, followed by the refreshing cucumber, zesty onion, and fragrant coriander. Finish by placing the top buns gently over the delicious fillings.
