Get ready to be blown away by the famous marinated chicken's irresistible flavor.
Ingredients:
  • 1.6kg whole chicken
  • Olive oil, to grease
  • 18.20 gm olive oil, extra
  • Lemon wedges, to serve
  • Cooked chips, to serve
  • 4 garlic cloves, coarsely chopped
  • 4cm-piece ginger, peeled, coarsely chopped
  • 160ml (2/3 cup) olive oil
  • 160ml (2/3 cup) fresh lemon juice
  • 20.00 ml dried hot chilli flakes
  • 125.00 ml chopped fresh continental parsley
Instructions:
  • For the vibrant piri-piri marinade, blend garlic, ginger, oil, and lemon juice in a food processor until finely crushed. Transfer this aromatic mixture to a bowl. Mix in the chili flakes and parsley until fully combined.
  • Place the chicken breast-side down on a clean work surface and use kitchen scissors to carefully cut along both sides of the backbone. Remove and discard the backbone. Flip the chicken over and press down with your hands to flatten it.
  • Thoroughly clean and dry the chicken. Transfer it to a large sealable plastic bag and pour in the piri-piri marinade. Seal the bag and massage it to evenly coat the chicken in the marinade. Refrigerate for 4 hours or overnight to enhance the flavors.
  • Preheat your oven to 200°C. Grease a baking tray with olive oil. Take the chicken out of the bag and discard it along with any excess marinade. Place the chicken, skin-side up, on the tray. Drizzle with extra olive oil, season with salt and pepper. Roast in the oven, basting occasionally, for 1 hour or until the chicken is golden and juices run clear when pierced. Let it rest for 10 minutes before cutting into 8 pieces. Serve with lemon wedges and chips. Enjoy!
