Impress a hungry crowd with savory Portuguese roast chicken, paired with crispy potatoes and caramelized onions.
Ingredients:
  • 1 long red chilli, seeded, finely chopped
  • 40.00 ml red wine vinegar
  • 16.00 gm brown sugar
  • 10.00 gm ground paprika
  • 20.00 ml oregano, finely chopped
  • 2.40 gm sea salt flakes
  • 2kg RSPCA Approved Extra Large Whole Chicken, cut into portions
  • 1kg baby Red Royale potatoes, halved
  • 2 red onions, cut into wedges
Instructions:
  • In a bowl, mix together the garlic, chili, vinegar, oil, sugar, paprika, oregano, and salt. Add the chicken and coat well. Cover with plastic wrap and refrigerate for 2 hours to marinate.
  • Preheat your oven to 200C. Place the chicken in a roasting pan and surround it with the potatoes and onions. Roast, turning occasionally, for 1 hour until fully cooked.
