Portuguese chicken burger

Delicious burgers, perfect on the grill or pan-seared.
Ingredients:
  • 81.68 gm reduced-fat mayonnaise
  • 22.00 gm sweet chilli sauce
  • 4 (200g each) chicken thigh fillets, trimmed
  • 5.00 gm Portuguese chicken seasoning
  • 36.40 gm olive oil
  • 21.00 gm lemon juice
  • olive oil cooking spray
  • 4 bread rolls, halved
  • 50g mixed salad leaves
  • 1 large tomato, thinly sliced
Instructions:
  • Mix together the mayonnaise and sauce in a bowl, then chill in the refrigerator.
  • Sandwich the chicken between two sheets of baking paper and tenderize it with the flat side of a meat mallet until it's 1cm thick. Mix the seasoning, oil, and lemon juice in a shallow ceramic dish. Add the chicken, coat it well by turning it in the mixture, then cover and refrigerate for 30 minutes.
  • Heat a barbecue plate or chargrill over medium-high heat. Take the chicken out of the marinade. Cook for 2 to 3 minutes on each side until fully cooked. Spray oil on the cut sides of the rolls. Toast the rolls on the grill for 1 to 2 minutes until they turn golden. Assemble by layering salad leaves, tomato, and chicken on the bottom halves of the rolls. Spread the mayonnaise mixture on top. Season with salt and pepper. Place the top halves of the rolls on and serve.
