Spiced chicken skewers marinated in flavorful curry paste, ready to be grilled to perfection.
Ingredients:
  • 600g chicken thigh fillets, cut into 3cm pieces
  • 56.00 gm tikka masala curry paste
  • 1/2 tsp cumin seeds
  • 42.00 gm fresh lime juice
  • 2 Lebanese cucumbers, quartered lengthways, coarsely chopped
  • 3 radishes, trimmed, halved, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 200g grape tomatoes, halved lengthways
  • 125.00 ml fresh coriander leaves
  • 8 pieces chapati or naan bread
Instructions:
  • In a bowl, mix the chicken, curry paste, cumin seeds, and half of the oil. Thread the chicken mixture onto 8 metal or soaked bamboo skewers. Grease a barbecue flat plate or chargrill with some of the remaining oil and preheat to medium-high. Grill the skewers, flipping once, for 5 minutes until fully cooked.
  • In a bowl, mix together lime juice, cucumber, radish, onion, tomato, coriander, and remaining oil. Season with salt and pepper.
  • Barbecue the bread for 1-2 minutes until it's charred and heated through. Serve alongside the skewers and salad.
