Whip up a quick and delicious chicken tikka masala using just 6 ingredients for the whole family!
Ingredients:
  • 300.00 gm Basmati rice
  • 18.40 gm vegetable oil
  • 500g chicken thigh fillets, trimmed, cubed
  • 540g jar tikka masala simmer sauce
  • Fresh coriander leaves, to serve
  • 187.50 ml Greek Style Yoghurt
  • 1 medium Lebanese cucumber, deseeded, finely chopped
  • 40.00 ml fresh coriander
Instructions:
  • Prepare fluffy, perfectly cooked rice by boiling it in a saucepan of water according to the instructions on the packet. Once tender, simply drain.
  • Heat oil in a large frying pan over medium heat. Cook chicken until browned, then stir in sauce. Bring to a boil, then simmer on medium-low heat for 10 minutes until chicken is cooked through.
  • Prepare the raita by mixing yoghurt, cucumber, and coriander in a bowl. Season with salt and pepper, then stir well to combine.
  • Portion the rice into bowls, generously ladle the flavorful curry on top, sprinkle with fresh coriander, and accompany it with a side of refreshing raita.
