Elevate your routine with swift, delectable chicken tikka masala skewers.
Ingredients:
  • 56.00 gm tikka masala curry paste
  • 420g yoghurt
  • 1kg skinless chicken thigh fillets, trimmed, cut into 3cm pieces
  • 1 bunch coriander
  • 10.00 gm caster sugar
  • 4cm piece ginger, finely chopped
  • 60ml olive oil
  • Juice of 2 limes
  • 1 telegraph cucumber, thinly sliced
  • 36.80 gm sunflower oil
Instructions:
  • Submerge 8 wooden skewers in cold water and let them soak for 20 minutes.
  • Mix tikka masala paste with 1 cup (280g) yoghurt. Season generously. Marinate chicken in the mixture, cover, and refrigerate for 15 minutes.
  • Combine coriander stalks and leaves, sugar, ginger, garlic, olive oil, and half of the lime juice in a food processor. Pulse until a coarse puree forms. Mix in the remaining 1/2 cup (140g) yoghurt, season to taste, and set aside.
  • Toss the cucumber with the rest of the lime juice, season it, and set it aside.
  • In a sizzling pan, heat sunflower oil over medium-high heat. Skewer chicken. Cook, turning occasionally, until fully cooked, about 8-10 minutes.
  • Present the skewers accompanied by a flavorful coriander dressing and refreshing cucumber salad.
