Vibrant orange Tikka Masala sauce with aromatic spices, creamy tomato base, and juicy chicken chunks.
Ingredients:
  • 2 tablespoons ghee (clarified butter)
  • 1 onion, finely chopped
  • 1 tablespoon ground cumin
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon ground ginger
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground turmeric
  • 1 (14 ounce) can tomato sauce
  • 1 cup heavy whipping cream
  • 1 tablespoon white sugar, or more to taste
  • 2 teaspoons paprika
  • 1 tablespoon vegetable oil
  • 4 skinless, boneless chicken breast halves, cut into bite-size pieces
  • 0.5 teaspoon curry powder
Instructions:
  • Collect all the ingredients needed for the recipe.
  • In a large skillet over medium heat, melt the ghee until shimmering. Cook the onion, stirring occasionally, until it turns translucent, which should take around 5 minutes.
  • Add the garlic and cook until fragrant for about 1 minute. Incorporate cumin, 1 teaspoon of salt, ginger, cayenne pepper, cinnamon, and turmeric into the onion mixture. Fry until fragrant for about 2 minutes.
  • Combine the tomato sauce with the onion and spice mixture, then simmer on low heat.
  • Simmer sauce for 10 minutes, then stir in cream, 1 tablespoon sugar, and paprika. Continue simmering and stirring frequently until sauce thickens, 10 to 15 minutes.
  • In a skillet over medium heat, heat vegetable oil. Add chicken and curry powder. Sear until lightly browned on the outside but still pink inside, stirring frequently, about 3 minutes.
  • Combine the chicken along with any pan juices into the flavorful sauce. Let the chicken simmer in the sauce for approximately 30 minutes until fully cooked; adjust the levels of sugar and salt according to your taste preferences.
