Ingredients:
  • 36.80 gm oil
  • 4 green chillies, finely chopped
  • 500g spinach
  • 1 medium onion, grated
  • 2 garlic cloves, chopped
  • 20.00 ml ginger, grated
  • 1 medium tomato
  • 62.50 ml cashews, lightly roasted and crushed
  • 200g Paneer cheese, cut into 2cm cubes
  • Garam masala, to taste
  • Hot chilli powder, to taste
  • 2.50 gm ground cumin
  • 1-2 tsp ground coriander
  • Pinch of turmeric
Instructions:
  • Prepare the spinach by washing and cutting or tearing into large pieces.
  • In a large frying pan over medium heat, warm up 1 tablespoon of oil. Add the chillies followed by the spinach. Cook until the leaves are wilted. Take the pan off the heat and let it cool for 5 minutes before serving.
  • Place the ingredients in a blender or food processor, add a pinch of salt, and blend until smooth.
  • Blanch the tomato in boiling water for 1-2 minutes, then peel and puree it.
  • Clean the pan and heat it over medium heat. Add 1 tablespoon of oil, then fry the cheese until it turns golden. Set it aside, covering it to keep it warm.
  • If needed, drizzle additional oil in the pan. Once the pan is heated to medium-hot, sauté the onion for 2-4 minutes. Then, introduce the garlic, ginger, cumin, coriander, garam masala, and chili powder to your preference. Stir and cook for another 2-3 minutes.
  • Combine the spinach mix, tomato pulp, cashews, turmeric, and salt to taste in a bowl. Mix well and add water if necessary to achieve desired consistency.
  • - Cook for 5-10 minutes, then add the cheese during the final minutes to melt. Serve with rice and naan.
