Paneer cheese with spiced spinach sauce - quick, easy, and flavorful vegetarian Indian dish.
Ingredients:
  • 2 tablespoons vegetable oil, divided
  • 2 cups chopped fresh spinach
  • 1 teaspoon ground cumin
  • 0.75 cup chopped onion
  • 2 green chile peppers, chopped
  • 2 teaspoons chopped garlic
  • 2 teaspoons ground coriander
  • 1 teaspoon ground red chiles
  • 2 tablespoons salt
  • 8 ounces paneer, cubed
Instructions:
  • In a skillet, warm 1 tablespoon of vegetable oil over medium heat. Add spinach and sauté until wilted, about 3 to 4 minutes. Transfer the cooked spinach to a blender or food processor and blend until a coarse paste forms.
  • Heat the remaining oil in a saucepan over medium heat. Sauté the cumin until fragrant, for about 30 seconds. Add onion, green chile peppers, and garlic, cooking and stirring until the onion is tender, for 3 to 4 minutes. Stir in tomatoes, cover, and simmer for 1 minute. Add the blended spinach paste, water, ground coriander, red chile powder, and salt. Keep cooking until heated through, around 2 to 3 minutes.
  • Add paneer to the vibrant spinach mixture and allow to simmer until heated through, approximately 1 to 2 minutes.
