Paneer cubes in creamy spinach sauce with aromatic spices like cumin, coriander, turmeric, and curry powder.
Ingredients:
  • cooking spray
  • 0.5 pound paneer, cubed
  • 2 tablespoons canola oil, divided
  • 1 teaspoon cumin seeds
  • 1.5 cups water
  • 1 (10 ounce) package fresh spinach
  • 1 large tomato, diced
  • 3 cloves garlic
  • 2 dried red chile peppers, or to taste
  • 1 tablespoon chopped fresh ginger root
  • 1 teaspoon curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 pinch salt to taste
Instructions:
  • Heat a skillet coated with cooking spray over medium heat. Fry paneer cubes until golden brown on all sides, approximately 5 minutes. Transfer the paneer to a bowl.
  • In the same skillet where you cooked the paneer, heat 1 tablespoon of canola oil over medium heat. Add cumin seeds and cook until they turn slightly red. Stir in water, spinach, tomato, garlic, chile peppers, ginger, curry powder, ground coriander, and ground turmeric. Season with salt.
  • Simmer the spinach mixture until the garlic is very soft, for about 15 to 20 minutes. Then, remove it from the heat and let it cool.
  • Blend the spinach mixture in a food processor or blender until smooth.
  • In a saucepan over medium heat, warm up the last tablespoon of canola oil. Add in the spinach puree and paneer cubes. Let it simmer until hot, approximately 5 minutes.
