Thai massaman curry paste recipe

Indulge in a culinary masterpiece with this untested member recipe.
Ingredients:
  • 3 shallots, sliced
  • 5 cloves garlic, peeled
  • 2 red chillies, de-seeded
  • 10g galangal (or ginger), peeled and sliced
  • 2 stalks lemongrass, outer leaves and bulb removed, thinly sliced
  • 2 makrut lime leaves
  • 20.00 ml coriander seeds
  • 20.00 ml cumin seeds
  • 1/2 tsp nutmeg
  • 1.25 gm cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp ground cardamom
  • 48.80 gm fish sauce
  • 6.10 gm shrimp paste
  • 1/2 can coconut milk (see notes)
  • Additional fish sauce, to taste (add fish sauce instead of salt)
Instructions:
  • Crush coriander seeds, cumin seeds, and nutmeg in a mortar and pestle until finely ground.
  • Combine all ingredients in a food processor or blender and blend until smooth.
  • Combine the sauce with your choice of chicken, seafood, or vegetables in a casserole or baking dish for instant enjoyment.
