Irresistibly tasty Asian chicken salad - simple and fast to make!
Ingredients:
  • 12 chicken tenderloins
  • 65.63 gm light soy sauce
  • 16.00 gm brown sugar
  • 1 garlic clove, crushed
  • 1/2 small red chilli, deseeded, finely chopped
  • 100g snow pea sprouts, trimmed
  • 1 carrot, peeled, grated
  • 2 green onions, thinly sliced
  • 1/4 small Chinese cabbage, shredded
  • 250.00 ml coriander leaves
  • 42.00 gm lime juice
  • 18.20 gm peanut oil
  • 12.20 gm fish sauce
  • 5.00 gm caster sugar
Instructions:
  • Place the chicken in a shallow ceramic dish. Mix soy sauce, brown sugar, garlic, and chili in a jug, whisk until well combined. Pour the mixture over the chicken, ensuring it is coated well. Cover and refrigerate for 30 minutes, if possible.
  • In a bowl, mix together sprouts, carrot, onions, cabbage, and coriander. Toss gently to combine. In a screw-top jar, combine lime juice, oil, fish sauce, and caster sugar. Shake vigorously until well combined.
  • Heat up the barbecue plate on high until it's sizzling hot, then lower the heat to medium. Grill the chicken for about 3 minutes on each side or until it's fully cooked. Drizzle the dressing over the salad, mix it well, and serve alongside the chicken.
