Deliciously smoked beef short ribs with steak rub, a Texas favorite that rivals brisket.
Ingredients:
  • hardwood pellets as needed
  • 4 pounds beef short ribs
  • 0.5 cup Montreal-style steak seasoning
  • 2 tablespoons mild chili powder
  • 1 teaspoon garlic powder
  • 2 tablespoons Worcestershire sauce
  • 8 fluid ounces apple juice
Instructions:
  • Add the wood chips to the pellet grill as directed by the manufacturer. Preheat the grill to 275 degrees F (135 degrees C).
  • Carefully trim ribs with a sharp knife to remove excess fat and silver skin from the top. Keep the membrane on the bottom of each rack to maintain structural integrity while cooking.
  • Grind steak seasoning in a coffee or food chopper to medium coarseness. Transfer to a shaker bottle and mix with chili powder and garlic powder until well combined.
  • Massage half of the Worcestershire sauce onto the bottom of the ribs to create a flavorful base, then generously apply the rub mixture. Flip the ribs and repeat the process on the meaty side. Lightly spritz the ribs with apple juice to enhance the flavor profile.
  • Position the ribs on the hot pellet grill with the meaty side facing the main heat source at the back of the grill, away from the lid.
  • Smoke the ribs, gently spritzing them with a light coat of apple juice every 30 minutes to maintain moisture, until the internal meat temperature reaches 198 to 203 degrees F (92 to 95 degrees C), which typically takes 4 to 6 hours. If needed, increase the heat to 325 degrees F (165 degrees C), but monitor the internal temperature closely due to the quicker cooking time. The ribs are done when a temperature probe slides in easily, like through a brisket or butter.
  • Take the ribs off the grill and transfer them to a generous cutting board. Slice them into individual ribs for a stunning presentation or shred the meat and arrange it on a serving tray.
