Double Barbecue Bacon Chicken Foil Packs

Delicious BBQ chicken foil packs with bacon, green onions, and herbed cheesy potatoes.
Ingredients:
  • 1 1/4 lb Yukon gold potatoes, cut in 3/4-inch chunks
  • 2 teaspoons oil
  • 1 tablespoon Italian seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 boneless skinless chicken breasts (6 oz each)
  • 1 1/2 teaspoons barbecue seasoning
  • 4 slices cooked bacon, halved crosswise
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/4 cup barbecue sauce
  • 2 green onions, sliced
Instructions:
  • Preheat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil and generously spray with cooking spray.
  • Place the sliced potatoes into a medium bowl. Drizzle with oil and sprinkle with Italian seasoning, salt, and pepper. Toss until the potatoes are evenly coated.
  • Sprinkle chicken with BBQ seasoning, then place each piece in the center of a foil sheet. Spoon potato mixture around the chicken evenly. Finally, layer bacon over the chicken breasts.
  • Bring up two sides of the foil so they meet, then seal the edges by making a tight 1/2-inch fold and folding again to allow heat circulation and expansion. Finally, fold the other sides to seal.
  • Place the packets on the grill over medium heat, cover, and cook for 10 minutes. Rotate the packets 1/2 turn and continue cooking for 9 to 10 more minutes, or until the chicken juices run clear when the thickest part is cut (reaching at least 165°F). Remove the packets from the grill, cut a large X across the top of each, carefully unfold the foil, sprinkle the potatoes with cheese, place 1 tablespoon of barbecue sauce on each chicken breast, and garnish with green onions.
